Because it does not have a non-stick coating, food will cause the steel to discolor. As disheartening as this may seem, a little Barkeeper's Friend goes a long way!
Keeping your cookware shiny is an easy process. After the pan has been washed, sprinkle a little BF (Barkeeper's Friend) and rub with a wet rag. Bear in mind that the rag will be stained, so don't use anything you want to stay white! Use a little elbow grease, but you shouldn't need to scrub too hard. Don't be afraid to use the BF - it's not that expensive! After scrubbing for about 30 seconds or so, rinse the pan. If it hasn't become shiny, repeat the process.
If the pan is severely discolored it may take several applications of the BF to come completely clean. You may be able to see in my photos that my pan isn't perfectly shiny. It had been several weeks since I'd polished it (for shame!), so it will take more than one session to clean it back up.
